On the most beautiful avenue in the world - the Seine river - Japanese chef Masayoshi Hanada welcomes you to his restaurant, HANADA, a place where his singular interpretation of Japanese gastronomy takes shape. Here, sushi is revealed between shadow and light, each nigiri elevated to the status of a work of art, in silent dialogue with the nearby galleries.
A custodian of a philosophy in which every gesture is the expression of a deeper intention, and where perfection is born of perseverance, the chef invites you to see, touch, and taste the culmination of over twenty years of discipline, doubt, and refinement - offering a living work where the invisible has its rightful place.
Trained in Japan’s most exacting establishments, Chef Hanada envisions a refined, essential sushi, crafted with utmost respect for technique, seasonality, and ingredient integrity. Served piece by piece, each nigiri is a delicate balance between sea, rice, and hand. The ceramics, selected one by one for their matte textures and muted tones, extend this aesthetic of contrast.
Like an artist - and with the choice of Quai Voltaire far from coincidental - the chef composes, creates, and reinvents his omakase every evening. The space has been purposefully designed as a quiet vessel that fades into the background, allowing the gesture to take center stage. Even the massive hinoki counter seems to dissolve into a cinematic chiaroscuro. Conceived as a place of reflection, HANADA offers a meditative pause in the heart of Paris. Here, Japanese cuisine becomes contemplative art - a contemporary embodiment of In Praise of Shadows.
HANADA is not a restaurant. It is a sanctuary of slow time.
Unique Tasting Menu – Chef’s Omakase – €350
Note: In order for each guest to fully immerse themselves in the HANADA experience - and to allow memories to be etched directly into their own minds - photography and video are not permitted during the meal. The Chef, however, will be honored to take a photo with guests at the end of the dinner.
